Toi Toi Winemaker's Dinner
The Marina Restaurant and Bar in West Harbour recently held the Toi Toi Winemaker's dinner. A chilly, wet evening saw 80 people venture out for a night of fine food and wine. Head chef Nick Peraua did a splendid job matching his 5-course degustation dinner with a selection of Toi Toi special wines.
Guests were served the Toi Toi Brut Rose on arrival and then once seated, were treated to a delectable selection of food: -
Hand crafted breads served with potted tuna
Toi Toi Unoaked Chardonnay 2010
Turkey terrine with Cumberland jelly
Toi Toi Reserve Sauvignon Blanc 2010
Sweet corn, royal salmon served with smoked eel and lemongrass butter
Toi Toi Reserve Pinot Gris 2009
Game Pie (goat and boar cheek) with a vegetable spear
Toi Toi Pinot Noir 2009
Salted smoked chocolate and vine tomato stuffed with nuts and fruit
Toi Toi Late Harvest Dessert 2009
Between each course Nick enthusiastically outlined various ingredients, sauces and preparations required for each dish.
And a wine dinner wouldn't be complete without a winemaker. Toi Toi's Chris Young enjoyed giving his own interpretation of the food and wine combinations and provided some interesting information on producing the various wines tasted.
